Instructions
 

Preparation

  • Preheat your oven to 350 degrees F.
  • Pat the pollock fillets dry with a paper towel and place them on a parchment-lined baking sheet.
  • Brush the tops and sides of the fillets with olive oil.
  • In a small bowl, combine sea salt, garlic powder, Italian seasoning, onion powder, and black pepper. Sprinkle half of this mixture over the fillets.
  • In a medium bowl, blend panko breadcrumbs and shredded Parmesan cheese with the remaining spice mixture.
  • Sprinkle the panko mixture over the fish, gently pressing down to ensure it adheres well.

Baking

  • Slide the baking sheet into the oven and bake the fillets for 18 to 20 minutes, or until they reach an internal temperature of 145 degrees F.
  • For extra crispiness, broil the fish for the last minute, watching closely.
