Instructions
 

Preparation

  • Preheat your oven to 350 degrees F.
  • Pat the pollock fillets dry and place them on a parchment-lined baking sheet.
  • Brush the tops and sides of the fillets with olive oil.
  • In a small bowl, mix together the sea salt, garlic powder, Italian seasoning, onion powder, and black pepper.
  • Sprinkle half of the spice mixture evenly over the fillets.
  • In another bowl, combine the panko breadcrumbs and shredded Parmesan with the remaining spice mixture.
  • Sprinkle the panko mixture over the fish, pressing down gently.

Cooking

  • Bake for 18 to 20 minutes, or until the fish reaches an internal temperature of 145 degrees F.
  • For extra crispiness, broil for the last minute.
  • Serve immediately.

Try different fish like cod or haddock, use fresh herbs if available, add a sprinkle of lemon zest, and customize spices according to your taste.
