Baklava Cheesecake

Ingredients
  

For the crust

  • 1 cup finely chopped walnuts
  • 1 cup finely chopped pistachios
  • 1/2 cup melted butter For brushing
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon Add a pinch of nutmeg for extra flavor
  • 5 sheets phyllo dough Brush each layer with melted butter

For the cheesecake filling

  • 16 oz softened cream cheese Ensure at room temperature for smooth mixing
  • 1 cup sour cream
  • 1 cup granulated sugar Adjust to taste for a less sweet dessert
  • 1 teaspoon vanilla extract
  • 3 large eggs Add one at a time for a lump-free mixture

For the honey syrup

  • 1/2 cup honey
  • 1/4 cup water
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla

Instructions
 

Preparation

  • Preheat your oven to 350 degrees F (175 degrees C).
  • In a large bowl, mix the chopped walnuts, pistachios, melted butter, sugar, and ground cinnamon until well combined.
  • Brush a 9-inch springform pan with melted butter and arrange five sheets of phyllo dough in the pan, brushing each layer with butter.
  • Spread the prepared nut mixture evenly over the phyllo layers, pressing down gently.
  • Bake the crust for 15-20 minutes until it's lightly golden and crispy.

Cheesecake Filling

  • While the crust is baking, beat the softened cream cheese until smooth.
  • Add in the sour cream, sugar, and vanilla extract, mixing until well combined.
  • Beat in the eggs one at a time until creamy and lump-free.
  • Once the crust is cooled, pour the cheesecake filling over it and spread evenly.
  • Gently fold the phyllo edges over the filling.
  • Bake for 45-50 minutes until the center is set but still has a slight jiggle.

Honey Syrup

  • In a saucepan, combine honey, water, sugar, vanilla, and cinnamon.
  • Bring to a boil, then simmer for about 10 minutes until slightly thickened.

Finishing Touch

  • Let the cheesecake cool at room temperature before refrigerating for at least four hours.
  • Before serving, drizzle the warm honey syrup on top and sprinkle with extra chopped nuts.

Notes

For variations, try adding a pinch of nutmeg or swapping nuts. To store, keep in an airtight container in the refrigerator for up to a week or freeze for up to three months.
