Preparation

  • Place the eggs in a saucepan and cover with cold water, ensuring they are fully submerged.
  • Bring the water to a gentle boil, then cover and turn off the heat. Let eggs sit for 10 to 12 minutes.
  • Transfer the eggs to an ice bath filled with cold water to stop the cooking process and cool completely.
  • Once cool, slice the eggs in half lengthwise and remove the yolks into a mixing bowl.

Filling

  • Mash the yolks with mayonnaise, mustard, vinegar, salt, and pepper until smooth and creamy.
  • Fill the egg white halves with the yolk mixture either using a spoon or piping bag for presentation.
  • Sprinkle paprika on top and garnish with fresh chives.
  • Chill in the refrigerator until ready to serve.

Notes
