Instructions
 

Preparation

  • Peel the potatoes and chop them into even chunks.
  • Place the potato pieces in a large pot, covering them with cold water, and add 1 teaspoon of salt.

Cooking

  • Bring the pot to a boil over high heat, then reduce it to a gentle simmer.
  • Cook the potatoes until they are fork-tender, about 15 to 20 minutes.
  • Drain the potatoes and return them to the hot pot. Allow them to steam dry for 1 to 2 minutes.
  • Add the butter and begin mashing until creamy.
  • Gradually pour in the heavy cream or milk while continuing to mash.
  • Season with remaining salt and pepper, tasting as you go. If using garlic, fold it in along with the parsley.

Serving

  • Serve hot topped with an extra pat of butter and sprinkle with chopped parsley.

Common mistakes include overcooking potatoes, using a food processor, and forgetting to season throughout mashing. You can swap heavy cream for low-fat yogurt or use olive oil instead of butter.
