For the Biscoff Buttercream Frosting

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a cupcake tin with cupcake liners.
  • Cream together the softened butter and brown sugar until light and fluffy, about 3-5 minutes.
  • Add the eggs one at a time, mixing well after each addition. Stir in the buttermilk and vanilla extract.
  • In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  • Gradually add the dry mixture to the wet ingredients, stirring until just combined. Avoid over-mixing.
  • Fold in the Biscoff spread until evenly distributed.

Baking

  • Fill each cupcake liner two-thirds full.
  • Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  • Cool the cupcakes in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Frosting

  • In a medium bowl, beat the softened butter until creamy, then gradually add powdered sugar.
  • Mix in the Biscoff spread and vanilla extract until fluffy, adjusting the consistency with heavy cream.
  • Frost cooled cupcakes generously and top with a Biscoff cookie.

Notes

Ensure ingredients are at room temperature for best results. You can add extra Biscoff spread for a stronger flavor or include chocolate chips or nuts for crunch.
