For the Blondies

  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts or pecans optional
  • 1/2 cup crushed pineapple optional

For the Cream Cheese Frosting

  • 1 cup cream cheese softened
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar adjust with milk if necessary

Preparation

  • Preheat your oven to 350°F (175°C). Prepare an 8x8 inch baking pan by greasing it or lining it with parchment paper.
  • In a mixing bowl, combine the melted butter, brown sugar, and granulated sugar; whisk until creamy and smooth.
  • Incorporate the eggs and vanilla extract, mixing until blended.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • Gradually fold the dry ingredients into the wet mixture, stirring gently until just combined.
  • Fold in the grated carrots, chopped nuts, and crushed pineapple if desired.

Baking

  • Pour the batter into the prepared pan, spreading it evenly.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the blondies to cool in the pan for 10-15 minutes, then transfer them to a wire rack to cool completely.

Preparing the Frosting

  • While the blondies cool, prepare your cream cheese frosting by mixing softened cream cheese with butter until creamy.
  • Gradually add powdered sugar, adjusting with milk if necessary for consistency.

Notes

Use fresh, finely grated carrots for the best results. Roasting the nuts enhances their flavor. For lower sugar options, substitute brown sugar with coconut sugar. Ensure cream cheese is at room temperature for smooth blending.
