Ingredients
  

Chicken and Seasoning

  • 1.5 pounds chicken breasts, cut into 1/2-inch chunks Juicy and tender
  • 1 teaspoon ground paprika For vibrant color
  • 0.5 teaspoon turmeric powder For warm earthiness
  • 2 teaspoons kosher salt, divided For seasoning
  • 1 teaspoon ground black pepper For a little kick

Cooking Ingredients

  • 3 tablespoons canola oil For cooking and enhancing flavors
  • 1 medium yellow onion, diced Adds sweetness and aroma
  • 3 cloves garlic, minced For fragrant punch
  • 13.5 ounces coconut milk, canned Creamy and luscious
  • 2 teaspoons curry powder Infuses warmth and depth
  • 1 tablespoon freshly squeezed lime juice For a zesty finish
  • 2 tablespoons fresh cilantro, chopped (optional) For garnish

Instructions
 

Preparation

  • Cut the chicken breasts into 1/2-inch chunks and sprinkle with paprika, turmeric, 1 teaspoon of salt, and black pepper. Toss to coat the chicken evenly.
  • In a large pot over medium-high heat, add 2 tablespoons of canola oil. Once shimmering, add the seasoned chicken to the pot and brown for about 3-4 minutes. Remove the chicken and set aside.
  • In the same pot, add the remaining tablespoon of oil. Add the diced onion and sauté for around 10 minutes until translucent.
  • Before the onions are ready, add the minced garlic and stir for 30 seconds.

Cooking

  • Return the browned chicken to the pot, then pour in the coconut milk along with the remaining salt. Stir well and bring to a low boil.
  • Once bubbling, reduce the heat to a simmer and cook for 30 minutes, stirring every 10 minutes.
  • After 30 minutes, stir in the curry powder and lime juice, and let it rest for another 10 minutes.

Serving

  • Serve the Chicken Curry hot, garnished with fresh cilantro. Pair it with naan or steamed rice.

Notes

Ensure uniform chicken cuts for even cooking. Adjust curry powder and lime juice to taste. For heat, add green chilies or chili powder. Fresh cilantro enhances flavor.
