Instructions
 

Preparation

  • In a large bowl, toss the chicken pieces with fajita seasoning until they are evenly coated. For best flavor, let them marinate for about 15 minutes if time allows.

Cooking the Chicken

  • Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken to the skillet and cook for about 5-7 minutes until cooked through and browned. Once done, remove and set aside.

Sautéing the Vegetables

  • Using the same skillet, add the sliced bell pepper and red onion. Sauté for about 5-6 minutes until they are soft and slightly charred. Season them with salt and pepper to taste.

Assembling the Bowls

  • In serving bowls, place a portion of the cooked brown rice or quinoa as the foundation of your burrito bowl.
