Ingredients
  

For the Chicken

  • 1 lb juicy chicken breast, cut into bite-sized pieces Seasoned with aromatic fajita spices
  • 2 tablespoons fajita seasoning
  • 1 tablespoon olive oil For cooking

For the Veggies

  • 1 red onion sliced
  • 2 cups bell peppers (assorted colors) Sliced

For Serving

  • 1 cup cooked brown rice or quinoa Base for the bowl
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup fresh shredded lettuce
  • 1 medium tomato, diced
  • 1/2 cup guacamole
  • 1/2 cup sour cream or Greek yogurt
  • 1 small bunch fresh cilantro For garnish
  • 1 lime wedges For serving
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a large bowl, toss the chicken pieces with fajita seasoning until they are evenly coated. Let them marinate for about 15 minutes if time allows.
  • Heat olive oil in a skillet over medium-high heat. Add seasoned chicken to the skillet and cook for about 5-7 minutes until cooked through and browned. Remove and set aside.
  • Using the same skillet, add sliced bell pepper and red onion. Sauté for about 5-6 minutes until they are soft and slightly charred. Season with salt and pepper to taste.

Assembly

  • In serving bowls, place a portion of cooked brown rice or quinoa as the foundation of your burrito bowl.
  • Top each bowl with black beans, corn, sautéed chicken, lettuce, diced tomato, guacamole, and a dollop of sour cream.
  • Garnish with fresh cilantro and serve with lime wedges.
