Ingredients
  

Main Ingredients

  • 2 cups cooked jasmine rice preferably day-old, fluffy and perfect for frying
  • 1 cup cooked chicken, diced tender and flavorful
  • 1 cup pineapple chunks freshly cut or canned, sweet and juicy
  • 1/2 cup frozen peas and carrots mix vibrant colors and added nutrition
  • 1/4 cup green beans, chopped crunchy and fresh
  • 2 tablespoons soy sauce rich with umami
  • 1 tablespoon oyster sauce optional, adds depth and flavor
  • 2 tablespoons vegetable oil for sautéing
  • 2 green onions, chopped fresh garnish
  • 2 cloves garlic, minced aromatic and savory
  • Salt and pepper to taste balance and seasoning
  • Optional: sesame seeds for garnish for that extra flair

Instructions
 

Preparation

  • Heat vegetable oil in a large skillet or wok over medium-high heat.
  • Sauté minced garlic for about 30 seconds until aromatic.

Cooking

  • Add diced chicken to the pan and cook until heated through, about a couple of minutes.
  • Incorporate frozen peas and carrots, and chopped green beans. Sauté for another 2-3 minutes until tender.
  • Push everything to one side of the pan, add cooked rice to the empty side, and pour soy sauce (and optional oyster sauce) over it.
  • Mix everything until the rice is well coated with sauces.
  • Toss in pineapple chunks and chopped green onions, stir-fry for another 3-5 minutes until well combined and hot.
  • Season with salt and pepper to taste, and sprinkle sesame seeds on top if desired. Serve hot.

Notes

Use day-old rice to prevent mushiness. Customize ingredients based on taste preferences. Serve with fresh cucumber salad or crispy spring rolls for a complete meal.
