  • 8-10 pieces flour tortillas, cut into strips Creates delightful layers and adds crunch.
  • 1/2 cup sour cream (optional, for topping) Balances the spice of the dish.
  • 1 whole avocado, diced (for garnish) Adds freshness and color.

Instructions
 

Preparation

  • Preheat your oven to 350 degrees F (175 degrees C).
  • In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes with green chilies, taco seasoning, and cooked rice. Stir well until fully mixed.

Layering

  • In a greased 9x13 inch baking dish, spread half of the tortilla strips evenly across the bottom.
  • Layer half of the chicken mixture on top of the tortilla strips, followed by one cup of shredded cheese.
  • Repeat with the remaining tortilla strips, then the rest of the chicken mixture, and finish with another cup of cheese.

Baking

  • Cover the casserole with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.

Serving

  • Let it cool for a few minutes before serving.
  • Serve warm topped with sour cream (if using), diced avocado, and fresh cilantro.

Notes

Consider adding diced bell peppers for more color or swapping flour tortillas for corn for a different flavor. You can prepare the casserole in advance and store it in the refrigerator for up to a day before baking.
