Instructions
 

Preparation

  • Preheat your oven to 350 degrees F (175 degrees C).
  • In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes with green chilies, taco seasoning, and cooked rice. Stir well until fully mixed.
  • In a greased 9x13 inch baking dish, spread half of the tortilla strips evenly across the bottom.
  • Layer half of the chicken mixture on top of the tortilla strips, followed by one cup of shredded cheese.
  • Repeat with the remaining tortilla strips, then the rest of the chicken mixture, and finish with another cup of cheese.
  • Cover the casserole with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
  • Let it cool for a few minutes before serving.
  • Serve warm topped with sour cream, diced avocado, and fresh cilantro.

Notes

Use rotisserie chicken for convenience. Experiment with toppings like sliced jalapeƱos or lime wedges for fun variations.
