Ingredients
  

Pasta

  • 16 oz elbow macaroni Tender and perfect for holding creamy cheese sauce.

Cheeses

  • 4 cups shredded sharp cheddar cheese Rich and tangy, adding depth of flavor.
  • 2 cups shredded Gruyère cheese Melty and nutty, enhancing the overall creaminess.

Sauce

  • 4 cups whole milk Creamy and luscious, making the sauce rich.
  • 4 tbsp unsalted butter For sautéing and creating the roux, providing a buttery flavor.
  • 1/4 cup all-purpose flour Thickens the cheese sauce for a creamy consistency.

Topping

  • 1 cup breadcrumbs (preferably panko) For that crisp, golden topping.

Seasoning

  • 1 1/2 tsp salt Enhances all the flavors, making each bite perfect.
  • 1/2 tsp black pepper Adds a subtle heat and complexity.
  • 1/2 tsp paprika (optional) For a hint of smokiness.
  • 2 tbsp chopped fresh parsley (optional) Adds a pop of color and freshness.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish to prevent sticking.
  • Cook the elbow macaroni in a large pot of salted boiling water until just al dente—about 6-8 minutes. Drain and set aside.

Sauce

  • In a large saucepan, melt 4 tablespoons of unsalted butter over medium heat.
  • Whisk in 1/4 cup of all-purpose flour and cook while stirring for 1-2 minutes until light golden.
  • Gradually pour in 4 cups of whole milk while whisking until smooth. Simmer gently until thickened, about 5 minutes.
  • Remove from heat and stir in 3 cups of cheddar cheese and 1 1/2 cups of Gruyère until melted.
  • Add in 1 1/2 teaspoons of salt, 1/2 teaspoon of black pepper, and paprika if desired.

Combine

  • Mix the cooked macaroni into the cheese sauce until evenly coated.
  • Transfer half of the mixture to the baking dish and sprinkle with half of the remaining cheeses.
  • Add the rest of the mac and cheese mixture and top with the remaining cheeses.
  • Mix breadcrumbs with a tablespoon of melted butter and sprinkle over the top.

Baking

  • Bake uncovered for about 20 minutes until bubbling. Broil for 2-3 minutes for extra browning.
  • Let it cool for about 10 minutes, then garnish with fresh parsley before serving.
