Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the flour, powdered sugar, softened butter, and salt until it resembles crumbly dough.
  • Press the mixture evenly into the bottom of a greased 8 by 8-inch baking pan.
  • Bake for 15-18 minutes or until lightly golden. Remove from the oven and let cool slightly.

Making the Filling

  • In a separate bowl, combine the drained ricotta cheese, powdered sugar, vanilla extract, and ground cinnamon, beating until smooth.
  • If desired, gently fold in the mini chocolate chips.

Assembly

  • Spread the ricotta filling evenly over the slightly cooled crust.
  • Refrigerate for at least 2 hours to set.
  • Before serving, dust with additional powdered sugar and sprinkle with chopped nuts if desired.
  • Cut into squares and enjoy!
