Preparation

  • Preheat your oven to 175°C (350°F). Grease and flour three 23 cm round cake pans.
  • In a medium saucepan, combine Coca-Cola, unsalted butter, and cocoa powder. Heat over medium until boiling, then remove from heat.
  • In a large bowl, whisk together all-purpose flour and granulated sugar. Pour hot Coca-Cola mixture over dry ingredients and stir until smooth.
  • Add buttermilk, eggs, baking soda, and vanilla extract to the batter. Mix well until fully incorporated.
  • Divide batter among prepared pans. Bake for 25–30 minutes. Allow cakes to cool on a wire rack.

Cream Cheese Filling

  • In a bowl, beat softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract.
  • In another bowl, whip heavy cream to stiff peaks and fold into cream cheese mixture until light and fluffy.

Assembly

  • Place one cake layer on a serving plate. Spread half of the cream cheese filling over the top. Repeat with the second layer and remaining filling, then top with the final layer.
  • In a saucepan, melt butter with cocoa powder and Coca-Cola over medium heat. Stir until smooth, then whisk in powdered sugar until glossy.
  • Pour warm fudge glaze over the assembled cake, allowing it to drip over the sides. Garnish as desired.

Notes

Use high-quality cocoa powder for richer flavor. For texture, toast crushed peppermint before garnishing. Don’t overmix after adding eggs.
