  • 2 teaspoons vanilla extract Enhances flavor profile.

For the Cream Cheese Filling

  • 200 g cream cheese, softened For creamy filling.
  • 120 g powdered sugar Sweetens the filling.
  • 1 teaspoon vanilla extract Elevates the filling flavor.
  • 240 ml heavy whipping cream Adds lightness to the filling.

For the Fudge Glaze

  • 60 g unsalted butter For fudgy glaze.
  • 20 g unsweetened cocoa powder Deepens chocolate flavor.
  • 60 ml Coca-Cola Continues cake flavor.
  • 150 g powdered sugar Creates a glossy glaze.

For Garnish (Optional)

Instructions
 

Preparation

  • Preheat your oven to 175°C (350°F) and prepare three 23 cm round cake pans by greasing and flouring them.
  • In a medium saucepan, combine the Coca-Cola, unsalted butter, and cocoa powder. Heat over medium until boiling, then remove from heat.
  • In a large bowl, whisk together the all-purpose flour and granulated sugar. Pour the hot Coca-Cola mixture over the dry ingredients and stir until smooth.
  • Add buttermilk, eggs, baking soda, and vanilla extract to the batter. Mix until fully incorporated.

Baking

  • Divide the batter evenly among the prepared pans and bake for 25–30 minutes or until a toothpick comes out clean. Let the cakes cool on a wire rack.

Cream Cheese Filling

  • Beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing well.
  • In another bowl, whip the heavy cream to stiff peaks. Fold it into the cream cheese mixture.

Assembly

  • Place the first layer on a serving plate and spread half of the cream cheese filling over it. Top with the second layer and repeat with the remaining filling.
  • Add the last cake layer.

Fudge Glaze

  • In a saucepan, melt butter with cocoa powder and Coca-Cola over medium heat. Stir until smooth, then mix in powdered sugar until glossy.
  • Pour the warm fudge glaze over the assembled cake, allowing it to drip down the sides.

Garnishing

  • Garnish with whipped cream, crushed peppermint, maraschino cherries, or chocolate shavings if desired.

Notes

Make sure all ingredients are at room temperature. Allow cakes to cool completely to prevent melting the filling. You can use chopped nuts for added texture. Add Coca-Cola to glaze if it's too thick.
