Preparation

  • Gather all of your ingredients in one place.
  • Ensure crab meat is prepped: cleaned, shell-free, and flaked into bite-sized pieces.

Mixing the Base

  • In a large mixing bowl, combine fresh crab meat, breadcrumbs, mayonnaise, bell pepper, onion, Dijon mustard, Worcestershire sauce, and Old Bay seasoning.
  • Gently fold the ingredients together, being careful not to break apart the crab meat. Season with salt and pepper to taste.

Forming the Crunchies

  • With clean hands, take small portions of the mixture and form into balls or patties, about the size of a golf ball.
  • Place them on a plate, ensuring they do not touch each other.

Heating the Oil

  • In a deep frying pan over medium heat, pour in enough oil to cover the bottom of the pan (about an inch deep).
  • Let the oil heat up; test by dropping a small piece of the mixture in the oil; if it sizzles, it's ready.

Frying to Perfection

  • Carefully lower your formed Crab Crunchies into the hot oil, avoiding overcrowding.
  • Fry for around 3-4 minutes per side or until golden brown and crisp. Use a slotted spoon to remove.

Serving

  • Present your Crab Crunchies on a platter, garnished with lemon wedges and your favorite dipping sauce.

Notes

Use high-quality crab meat for the best flavor. Chill the mixture for 30 minutes before frying for better shape retention. You can also bake these at 400°F for about 20 minutes for a healthier option.
