Preparation

  • Gather and measure all the ingredients.
  • In a large mixing bowl, combine the rolled oats, chopped dried cranberries, and chopped pistachios. Stir until evenly mixed.
  • Add almond butter, honey (or maple syrup), vanilla extract, and salt. Mix everything together thoroughly until sticky.
  • Form small balls, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  • Refrigerate the bites for at least 30 minutes to help firm up.

Notes
