Instructions
 

Preparation

  • Carefully cut the shell of each lobster tail down the center and gently lift the meat out, resting it over the shell for a stunning presentation.

Seasoning

  • Sprinkle the lobster meat with smoked paprika, salt, and pepper to enhance its natural sweetness.

Searing

  • In a large skillet, heat olive oil and butter over medium heat. Place the lobster tails flesh side down and sear for 2-3 minutes. Flip and cook for another 3-4 minutes until opaque.

Sauce Preparation

  • In the same skillet, melt more butter and add minced garlic, stirring for about 30 seconds until fragrant.
  • Add the chicken broth (or seafood stock), followed by heavy cream and Dijon mustard. Whisk until it thickens.

Combining

  • Adjust the seasoning of your sauce with salt and pepper to taste. Nestle the lobster tails back into the sauce for an additional minute.

Notes
