Instructions
 

Cooking the Pasta

  • In a large pot, bring salted water to a boil and cook the linguine according to package instructions until al dente. Reserve a cup of the pasta water before draining it.

Preparing the Sauce

  • While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  • Stir in the chopped sun-dried tomatoes and cook for 2 to 3 minutes until they soften slightly.
  • Pour in the heavy cream and bring it to a gentle simmer. Reduce the heat and mix in the grated Parmesan cheese until it melts smoothly.
  • Toss in the fresh spinach and stir until it wilts.

Combining Ingredients

  • Add the cooked linguine to the skillet, tossing to coat the noodles in the creamy sauce. If the sauce seems thick, add reserved pasta water little by little until you achieve your desired consistency.
  • Season with dried oregano, red pepper flakes (if using), salt, and pepper. Mix well to combine.

Serving

  • Serve immediately, garnishing each plate with fresh parsley and a sprinkle of paprika.

Notes

For a variation, consider adding grilled chicken or shrimp. You can also swap in other vegetables like mushrooms or bell peppers for a unique twist.
