Main Ingredients

  • 1 cup orzo pasta Tiny, rice-shaped pasta that soaks up flavors beautifully.
  • 2 cups vegetable or chicken broth The flavorful base that elevates the dish.
  • 1 cup broccoli florets (fresh or frozen) Bright green vegetables that add nutrition and crunch.
  • 1 cup shredded cheddar cheese Rich, sharp cheese that brings a creamy texture.
  • 1/2 cup heavy cream The key to achieving that ultra-creamy consistency.
  • 1 tablespoon olive oil Adds a hint of richness.
  • 1 small onion, diced Provides a savory foundation.
  • 2 cloves garlic, minced Aromatic goodness that enhances the flavor.
  • 1/2 teaspoon garlic powder A little extra depth to the garlic flavor.
  • Salt and pepper to taste Essential for seasoning.
  • Optional: Freshly ground black pepper and extra cheddar for garnishing Adding a touch of elegance to your dish.

Instructions

Preparation

  • In a large pot, heat the olive oil over medium heat. Swirl it around to cover the pot’s base.
  • Add the diced onion and sauté for about 3-4 minutes, or until it turns translucent.
  • Toss in the minced garlic and garlic powder, cooking for an additional minute. Stir often to prevent any burning.
  • Stir in the orzo pasta, ensuring each piece is well-coated with the oil and onions. Toast for 1-2 minutes until it lightly shines.
  • Add the vegetable or chicken broth to the pot, bringing it to a gentle boil.
  • Once boiling, reduce the heat to a simmer. Carefully stir in the broccoli florets and cover the pot. Cook for about 8-10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  • After removing the pot from heat, stir in the heavy cream and shredded cheddar cheese until the mixture becomes creamy.
  • Season with salt and pepper to taste. For an extra flavor blast, sprinkle more cheddar cheese and freshly ground black pepper on top before serving.
  • Enjoy your creamy, comforting one-pot broccoli cheddar orzo while it’s still warm!

Notes

For an even richer flavor, consider using homemade broth. Optional extras include mixing in vegetables like peas or spinach. Pre-chop the onion and garlic the night before to save time. Leftovers can be added to wraps, salads, or stuffed peppers.
