Preparation

  • Start by boiling a pot of salted water. Add the dried fettuccine and cook according to package instructions until al dente. Once cooked, reserve about 1 cup of pasta water, then drain the pasta and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, approximately 1 minute.
  • Next, add the julienned sun-dried tomatoes and cook for another 2 minutes until soft.
  • Stir in the canned diced tomatoes and tomato paste. Add the granulated sugar to balance the acidity and let everything simmer for 4-5 minutes until the sauce thickens slightly.
  • Lower the heat, then stir in the Greek yogurt and sour cream. Mix well until the sauce is creamy and smooth. Season with salt, pepper, and crushed red pepper flakes if using.
  • Toss in the baby spinach, allowing it to wilt into the sauce. This should take about 1-2 minutes.
  • Add the drained fettuccine to the skillet, tossing it with the sauce. Gradually add reserved pasta water until you reach your desired sauce consistency.
  • Sprinkle in the grated Parmesan cheese, stirring until melted and well combined. Adjust seasoning to taste.
