Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked shredded chicken, softened cream cheese, sour cream, diced green chilies, garlic powder, onion powder, cumin, salt, and pepper. Mix until smooth and creamy.
  • Lay out the flour tortillas on a clean surface. Place a generous scoop of the creamy chicken mixture in the center of each tortilla, roll it up, and place seam-side down in a greased baking dish.
  • Pour the chicken broth gently over the top of the filled tortillas.
  • Sprinkle the Monterey Jack cheese evenly over the enchiladas.
  • Cover the baking dish with aluminum foil and bake for about 20-25 minutes, or until heated through and cheese is melted.
  • Remove the foil and bake for an additional 5-10 minutes for a bubbly, golden finish.
  • Let the dish rest for a few minutes before garnishing with chopped fresh cilantro.

Notes

Ensure cream cheese is at room temperature for easy blending. Adjust seasoning gradually to taste. You can prepare the filling a day in advance.
