  • 2 cups Breakfast Potatoes Cooked hashbrowns work great as a substitute.
  • 4 large Eggs No substitutions recommended.
  • 1/4 cup Milk Optional for a dairy-free version.
  • 1 cup Shredded Cheddar Cheese Consider vegan cheese for a dairy-free option.
  • 1/4 cup Green Salsa Optional but highly recommended.
  • 4 pieces Soft Flour Tortillas "Super soft" tortillas are best for easy folding.

Optional Fill-ins

  • 1 can Black Beans Can be added based on preference.
  • Veggies Your favorite vegetables for customization.

Preparation

  • Prepare your breakfast potatoes. If using hashbrowns, heat them in a skillet over medium-high heat until golden and crispy. Set aside.
  • In a bowl, whisk together the large eggs and milk (if using). Pour the mixture into the skillet and scramble over medium heat until fully cooked. Add salt and pepper to taste.
  • Warm the flour tortillas for about 15 seconds in the microwave.

Assembly

  • Lay one tortilla flat on a clean surface. Begin layering: place a scoop of crispy hashbrowns in the center, followed by scrambled eggs, shredded cheese, and green salsa.
  • If adding optional fillings, include them now.
  • Fold the sides of the tortilla towards the center, then fold the top and bottom over, creating a sealed wrap.

Cooking

  • Heat a non-stick skillet over medium heat and add a bit of oil or cooking spray. Place the crunchwrap seam side down onto the skillet and cook for about 3-4 minutes until golden brown.
  • Carefully flip the wrap and cook the other side until crispy and heated through.
  • Remove from the skillet, slice in half (if desired), and serve hot with extra salsa or your favorite dipping sauce.

Notes

Ensure your potatoes are well-cooked and slightly crispy before assembly. Don’t overfill your tortillas for easier folding. Use a non-stick pan to prevent sticking. Keep fillings warm in the oven if making a large quantity.
