Ingredients

For the onion rings

  • 2 large sweet onions Vidalia or Walla Walla are perfect for their mild flavor
  • 1 cup gluten-free all-purpose flour this provides the perfect base for our batter
  • 1 teaspoon baking powder to add lift and lightness
  • 1 teaspoon garlic powder for an aromatic kick
  • 1 teaspoon paprika offering depth and smokiness
  • to taste salt and pepper seasoning to elevate the flavor
  • 1 cup cold sparkling water for a light and airy batter
  • 1 cup gluten-free breadcrumbs or crushed gluten-free cereal for an extra crunch
  • Vegetable oil for frying; choose a high-smoke-point oil

Instructions

Preparation

  • Peel the sweet onions and slice them into thick rings, aiming for about half an inch in thickness.
  • In a large mixing bowl, combine the gluten-free all-purpose flour, baking powder, garlic powder, paprika, salt, and pepper. Mix until evenly distributed.

Coating

  • Gradually whisk in the cold sparkling water until you achieve a smooth batter.
  • Dip each onion ring into the batter, letting the excess drip off before coating with gluten-free breadcrumbs.

Frying

  • Heat vegetable oil in a deep frying pan over medium-high heat, to about 350°F (175°C).
  • Carefully place the battered rings in the hot oil, frying in small batches.
  • Fry for 2-3 minutes on each side or until golden brown and crispy.
  • Remove onion rings and place them on a paper towel-lined plate to absorb excess oil. Sprinkle with extra salt while hot.

Notes

Let the batter rest for about 10 minutes before using for a fluffier texture. Adjust seasoning and experiment with spices for variations. For a healthier option, consider air frying.
