Preparation

  • Peel the sweet onions and slice them into thick rings, about half an inch thick.
  • In a large mixing bowl, combine gluten-free flour, baking powder, garlic powder, paprika, salt, and pepper. Whisk until well mixed.
  • Gradually whisk in the cold sparkling water until a smooth batter is achieved.
  • Dip each onion ring into the batter, letting the excess drip off, then coat them in gluten-free breadcrumbs.

Cooking

  • Heat vegetable oil in a frying pan to 350°F (175°C). Ensure there is enough oil to submerge the rings.
  • Carefully add the coated onion rings to the hot oil in batches, frying for about 2-3 minutes until golden brown and crispy.
  • Remove and place on a plate lined with paper towels to drain, seasoning with additional salt if desired.

Notes

For enhanced crispiness, chill the batter before use. Always fry with fresh oil for best flavor. Double-coating the rings can provide a crunchier crust.
