Preparation

  • Preheat your oven to 425°F (220°C).
  • Place the cleaned and cut carrot chunks into a large bowl.
  • Drizzle the olive oil over the carrots and sprinkle with salt, black pepper, and any optional spices. Toss gently to coat.
  • Boil the seasoned carrot chunks for about 10 minutes or until fork-tender.

Baking

  • Transfer the boiled carrots to a parchment-lined baking sheet and smash each carrot to about half an inch thick.
  • Roast in the oven for approximately 20-25 minutes, rotating halfway through, until golden brown and crunchy.
  • Let cool slightly before serving.

Notes

Ensure uniform carrot sizes for even cooking. Experiment with spices for unique flavors. Space carrots well on the baking sheet to avoid steaming instead of roasting.
