Preparation

  • Preheat your oven to 425°F (220°C).
  • Place the cleaned and cut carrot chunks into a large bowl, ensuring uniform size for even cooking.
  • Drizzle the olive oil over the carrots and sprinkle with salt, black pepper, and any optional spices. Toss gently to coat.
  • Boil the seasoned carrot chunks for about 10 minutes or until fork-tender.
  • Transfer the boiled carrots to a parchment-lined baking sheet and smash each carrot to about half an inch thick.
  • Roast in the oven for approximately 20-25 minutes, rotating halfway through, until golden brown and crunchy.
  • Let cool slightly before serving.

Notes

Choose fresh, organic carrots for the best taste. You can prepare the carrots in advance and roast them just before serving for the best crunch.
