  • In a large bowl, combine the cooked shrimp, diced Andouille sausage, red bell pepper, corn, cream cheese, green onions, garlic powder, onion powder, and Cajun seasoning if you're feeling adventurous. Blend them well until everything is combined, creating a delicious and aromatic filling.
  • Lay an egg roll wrapper on a clean surface with one corner facing you. Spoon about 2 tablespoons of the filling mixture into the center of the wrapper.
  • Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll it tightly, ensuring that the filling stays secure. Use a drop of water on your fingertip to seal the top corner of the wrapper. Repeat with the remaining wrappers and filling until finished.
  • In a deep fryer or a large pot, heat the oil to about 350 degrees Fahrenheit (175 degrees Celsius). It’s essential to get the oil hot enough to ensure that your egg rolls achieve that perfect crispy texture.

Cooking

  • Carefully add the egg rolls to the hot oil, just a few at a time to prevent overcrowding. Fry them for about 3 to 4 minutes, turning occasionally until they turn golden brown and crisp.
  • Once they are done, remove the egg rolls from the oil and let them drain on paper towels to absorb excess oil.
