Ingredients
  

For the Filling

  • 1 cup cooked shrimp, chopped Thaw if using frozen shrimp
  • 1/2 cup Andouille sausage, diced Can substitute with any smoked sausage
  • 1/2 cup red bell pepper, diced
  • 1/2 cup corn kernels, fresh or canned
  • 1/2 cup cream cheese, softened
  • 1/4 cup green onions, sliced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Cajun seasoning (optional) Add for an exciting kick

For Assembly and Frying

  • 10 pieces egg roll wrappers Can substitute with wonton wrappers
  • as needed cups oil for frying Heat to 350°F
  • as needed Sweet and sour sauce or mustard for dipping (optional)

Instructions
 

Preparation

  • In a large bowl, mix the cooked shrimp, Andouille sausage, red bell pepper, corn, cream cheese, green onions, garlic powder, onion powder, and Cajun seasoning until combined.
  • Lay an egg roll wrapper on a clean surface with one corner facing you. Spoon about 2 tablespoons of filling into the center.
  • Fold the bottom corner over the filling, then fold in the sides. Roll tightly and seal the top corner with water. Repeat with remaining wrappers and filling.

Frying

  • Heat oil in a deep fryer or large pot to 350°F (175°C).
  • Fry egg rolls in hot oil for about 3-4 minutes until golden brown and crispy.
  • Drain on paper towels and serve hot with dipping sauce.

Notes

To enhance your egg rolls, consider adding a splash of lemon juice to the filling or incorporating fresh herbs like cilantro. For a healthier option, try baking the egg rolls at 400°F (200°C) until crispy.
