Instructions
 

Preparation

  • In a mixing bowl, combine the peanut butter, soy sauce, rice vinegar, honey or maple syrup, sesame oil, sriracha, minced garlic, and grated ginger. Mix until smooth.
  • Thinly slice the cucumbers and place them in a large mixing bowl.
  • Pour the peanut sauce over the sliced cucumbers and toss gently to coat. Let sit for 10-15 minutes for the flavors to meld.
  • Taste and adjust seasoning with salt or extra soy sauce if needed.
  • Transfer to a serving dish, garnish with chopped peanuts, cilantro, and red pepper flakes (if using). Serve immediately.

Notes

For an extra layer of flavor, toast your peanuts before using them as a garnish. If sensitive to spice, start with a smaller amount of sriracha.
