  • 2 tbsp unsalted butter Adds a hint of creaminess to the ganache.

Instructions
 

Making the Ganache

  • Place chopped dark chocolate in a heatproof bowl.
  • In a small saucepan, gently bring the heavy cream to a simmer over low heat.
  • Pour the hot cream over the chopped chocolate and let sit for 2 minutes.
  • Stir the mixture until smooth, then add the unsalted butter and optional vanilla or sea salt, stirring until glossy.

Chilling and Rolling

  • Cover the ganache with plastic wrap and refrigerate for at least an hour.
  • Scoop portions of the ganache and roll into smooth balls.
  • Roll each truffle in cocoa powder or a desired coating and place on parchment paper.
  • Allow the truffles to harden slightly at room temperature before serving.

Notes
