For the cheese layer

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat the olive oil over medium heat. Add minced garlic and chopped shallots, sautéing until fragrant and shallots become translucent, about 3-4 minutes.
  • Stir in the tomato paste with dried oregano, salt, black pepper, and crushed red pepper. Cook for another 2-3 minutes until well combined.
  • Gently fold in the white beans and pour in the water. Stir to combine and let simmer for 5 minutes.
  • Stir in fresh rosemary, being careful not to break the beans too much.
  • Pour the bean mixture into a greased 9x13 inch baking dish, spreading it evenly.
  • Sprinkle smoked gouda over the top, followed by parmesan cheese.
  • Bake for approximately 25-30 minutes or until cheese is bubbly and golden.

Serving

  • Remove from oven and let cool for a few minutes before serving. Pair with crusty French bread.
