  • Gather all your ingredients together to ensure a smooth cooking process.
  • In a food processor, blend together the chickpeas, parsley, cilantro, chopped onion, minced garlic, cumin, coriander, salt, pepper, and breadcrumbs until the mixture is combined but still slightly chunky.

Cooking

  • Heat a generous amount of olive oil in a frying pan over medium heat.
  • Scoop portions of the falafel mixture and form them into small balls or patties.
  • Carefully place them in the heated oil, ensuring they don’t overcrowd the pan.
  • Fry each falafel until golden brown and crispy on all sides, about 4-5 minutes each side.
  • Remove from the pan and let them drain on paper towels.

Tahini Dressing Preparation

  • In a separate bowl, combine tahini, lemon juice, minced garlic, salt, and a splash of water.
  • Mix thoroughly until creamy, adding more water as needed to achieve your desired dressing consistency.
