Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh cilantro, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • ½ cup bread crumbs for texture
  • Salt and pepper to taste
  • Olive oil for frying generous amount to create crispy exterior

For Serving

  • 2 cups mixed greens or lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced

For the Tahini Dressing

  • cup tahini
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Water to thin to desired consistency

Instructions
 

Preparation

  • Gather all ingredients to ensure a smooth cooking process.
  • In a food processor, blend the chickpeas, parsley, cilantro, chopped onion, minced garlic, cumin, coriander, salt, pepper, and breadcrumbs until well combined but slightly chunky.

Cooking

  • Heat a generous amount of olive oil in a frying pan over medium heat.
  • Form portions of the falafel mixture into small balls or patties.
  • Carefully place the falafel in the heated oil without overcrowding the pan.
  • Fry the falafel until golden brown and crispy, about 4-5 minutes per side.
  • Remove the falafel and let them drain on paper towels.

Tahini Dressing

  • In a separate bowl, combine tahini, lemon juice, minced garlic, salt, and a splash of water.
  • Mix until the dressing is creamy and smooth, adding more water as needed.

Assembly

  • On serving plates, lay down a bed of mixed greens or lettuce.
  • Arrange the crispy falafel on top along with diced cucumber and cherry tomatoes.
  • Drizzle generously with the creamy tahini dressing and serve warm.

Notes

You can experiment with fresh herbs like mint or add cayenne pepper for heat. Ensure the oil is hot for crispy falafel. Chill the mixture for 30 minutes before frying for better shaping.
