Preparation

  • In a small saucepan, heat the cream over medium-low heat until it simmers gently. Be careful not to let it boil.
  • Place the white chocolate chips in a heatproof bowl. Pour the simmering cream over the chocolate and let it sit for 2 minutes.
  • Whisk the mixture until smooth and creamy, then mix in the peppermint extract. Let the mixture cool to room temperature.
  • Cover the bowl with plastic wrap and refrigerate the mixture for 1-2 hours until it firms up.
  • Once firm, scoop small amounts with a spoon and roll them into balls using your hands.
  • Roll the truffles in crushed peppermint candies or sprinkles until fully coated.
  • Enjoy your truffles at room temperature or chilled.

Notes

For variations, you can use dark or milk chocolate, chill your hands if the mixture is sticky, or add flavors like vanilla or almond extract.
