For the filling

  • 1/2 cup (1 stick) unsalted butter, softened Ensures the filling is smooth and rich.
  • 1 1/2 cups powdered sugar Sweetens the filling and provides a fluffy texture.
  • 1 teaspoon vanilla extract Ties the flavors together.
  • 2-3 tablespoons heavy cream or milk Achieves the desired creamy consistency.
  • a pinch of salt Balances sweetness.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large bowl, beat together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  • Beat in the egg and vanilla extract until thoroughly combined.
  • Gradually add the flour mixture and buttermilk, alternating between the two, starting and ending with the flour mixture. Mix just until combined.
  • Gently fold in the rainbow sprinkles.

Baking

  • Scoop tablespoonfuls of batter onto the prepared baking sheets, spacing them about 2 inches apart.
  • Bake for 10–12 minutes until the cakes spring back lightly when touched.
  • Let them cool completely on the baking sheets.

Filling

  • In a bowl, beat softened butter until creamy. Gradually mix in powdered sugar, vanilla, and a pinch of salt, adding enough heavy cream or milk to reach a fluffy consistency.
  • Spread or pipe the filling onto the flat side of half of the cakes and place the remaining cakes on top.
  • Roll the sides of the whoopie pies in extra sprinkles if desired.

Notes

Ensure your butter is softened to room temperature and don’t over-mix the batter for tender cakes.
