Preparation

  • Preheat your oven to 400°F (200°C). Wash the spaghetti squash thoroughly under running water. Cut the squash in half lengthwise and scoop out the seeds.
  • Drizzle the insides with olive oil, sprinkle with salt and pepper, and place cut-side down on a baking sheet lined with parchment paper. Roast in the oven for 30-40 minutes until tender.

Filling

  • While the squash cools, heat remaining olive oil in a skillet, add minced garlic, and cook until fragrant.
  • Then add chopped spinach and cook until wilted. Season with salt, pepper, and dried herbs; fold in shredded parmesan cheese.

Assembly

  • Scrape the flesh of the cooled squash until it resembles strands. Mix this with the filling and stuff it back into the squash halves.
  • Sprinkle extra parmesan on top if desired, and return to the oven for another 10 minutes.

Serving

  • Let it rest for a few minutes before serving, and garnish with fresh herbs if desired.

Notes

For extra flavor, consider roasting the garlic with the squash. If you want some heat, add red pepper flakes to the filling. Ensure your Parmesan cheese is rennet-free for a vegetarian-friendly option.
