Preparation

  • Heat the vegetable oil in a large pot over medium-high heat.
  • Add beef stew meat and brown on all sides for about 5-7 minutes. Remove and set aside.
  • In the same pot, add diced onion and sauté for 3 minutes until translucent.
  • Add minced garlic and cook for an additional 1-2 minutes, stirring frequently.

Cooking

  • Return browned beef to the pot. Stir in beef broth, tomato paste, paprika, and thyme.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 1.5-2 hours until the beef is tender.

Finishing Touches

  • Remove from heat and stir in sour cream until well combined.
  • Adjust seasoning with salt and pepper to taste.

Serving

  • Serve in bowls, garnished with fresh parsley.

Notes

Tips: Ensure beef is well-browned for depth of flavor. Greek yogurt can substitute sour cream for a lighter version. This can be made in a slow cooker for 6-8 hours on low. It pairs well with spaetzle, dumplings, or mashed potatoes.
