Preparation

  • In a bowl, combine soy sauce, finely grated ginger, minced garlic, honey, rice vinegar, and sesame oil. Whisk until the honey has dissolved.
  • Pat the cod fillets dry with a paper towel. Place the fillets in a shallow dish and pour half the marinade over the fish. Allow it to marinate for 30 minutes.

Cooking

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper and place the marinated cod fillets on the sheet.
  • In a saucepan, heat the remaining marinade over medium heat until it thickens slightly. Brush this glaze over the cod.
  • Bake the cod for 12-15 minutes or until opaque and flaking easily.
  • Let the cod rest for 3-5 minutes before serving. Serve over rice with steamed vegetables.

Notes

For a smokier flavor, consider grilling the cod instead of baking. Add red pepper flakes for extra kick. Always taste the marinade before marinating the fish to adjust sweetness or acidity.
