Ingredients
  

For the Chicken

  • 4 pounds bone-in chicken thighs Juicy and succulent
  • 1 lemon juice of 1 lemon Adds zesty brightness
  • 3 tablespoons olive oil Adds richness

For the Spice Blend

  • 2 teaspoons kosher salt For balance
  • 1 teaspoon ground mustard Delivers a mild bite
  • 1 teaspoon garlic powder Providing aromatic depth
  • 1 teaspoon paprika For a touch of smokiness
  • 1/2 teaspoon chili powder Adding a hint of heat
  • 1/2 teaspoon onion powder Enhances the flavor profile
  • 1/2 teaspoon dried thyme Contributes a fragrant herbaceous note
  • 1/2 teaspoon dried oregano For earthy warmth
  • 1/2 teaspoon ground black pepper Adding a finishing kick

For Serving

  • 3/4 cup barbecue sauce Sweet and tangy goodness

Instructions
 

Preparation

  • Pat the chicken thighs dry with paper towels.
  • Place the chicken thighs in a large baking dish and squeeze the juice of one lemon over them, rubbing it in.
  • Drizzle olive oil over the chicken and massage it into the meat.
  • In a separate bowl, combine kosher salt, ground mustard, garlic powder, paprika, chili powder, onion powder, thyme, oregano, and black pepper. Stir well.
  • Pour the spice blend over the chicken thighs, rubbing it in to coat evenly.
  • Cover and refrigerate for at least 2 hours.

Cooking

  • Preheat your grill, setting one side to high heat and leaving the other cooler.
  • Place chicken skin-side up on the hot side and cook uncovered for about 4 minutes until charred, then flip and cook for another 4 minutes.
  • Move to the cooler side and cook for an additional 2-3 minutes until reaching 160°F internally.
  • Brush barbecue sauce over the chicken and coat evenly.
  • Transfer back to the hot side to cook until internal temperature reaches 165°F.

Notes

For best results, consider marinating overnight. Adjust seasoning to taste for more heat, and use a meat thermometer to ensure safety.
