Preparation

  • Preheat your grill to medium-high heat (approximately 365°F).
  • Tear off large squares of aluminum foil to create packets for each cod fillet.
  • Place cod fillets on the prepared foil squares and season with kosher salt and ground black pepper.
  • In a small bowl, combine melted butter, finely diced shallot, and minced garlic. Brush this mixture over each cod fillet.
  • Lay thin slices of lemon on top of the seasoned fish.
  • Fold the foil over the cod fillets, crimping the edges to create secure packets.

Cooking

  • Reduce grill heat to medium and place the foil packets on the grill rack.
  • Grill for 8 to 10 minutes, or until the cod flakes easily with a fork.
  • Ensure fish reaches an internal temperature of 145°F.

Serving

  • Remove packets from the grill and allow them to stand for a minute before opening.
  • Garnish with additional fresh herbs if desired and serve immediately.
