Instructions
 

Preparation

  • Begin by bringing a large pot of water to a boil. Add the udon noodles and cook according to package instructions (8-10 minutes), until tender yet firm. Drain and set aside, adding a splash of vegetable oil to prevent sticking.
  • While the noodles are cooking, julienne the carrot, slice the bell pepper, and cut the zucchini into thin rounds. Wash and cut the broccoli into small florets.

Cooking

  • In a large skillet or wok, heat the vegetable oil over medium-high heat until hot.
  • Add the julienned carrot, sliced bell pepper, broccoli florets, and zucchini to the skillet. Sauté for about 5-7 minutes, stirring occasionally until the vegetables are tender yet still crisp.
  • Introduce the cooked udon noodles to the skillet with the sautéed vegetables. Toss everything together gently to mix.
  • Pour in the soy sauce, mirin, and sesame oil. Toss for an additional 2-3 minutes, allowing the flavors to meld.
  • Remove the skillet from the heat. Serve the Grilled Udon garnished with freshly chopped green onions.

Notes

Don't overcook the vegetables to maintain their crunch. Customize with seasonal veggies or protein like chicken or tofu. For spice, add sriracha or red pepper flakes while cooking. Toasted sesame seeds can enhance flavor when garnishing.
