  • 1 tablespoon Mirin Adds sweetness and complexity.
  • 1 tablespoon Sesame Oil Enhances the flavor profile.

Instructions
 

Cooking Noodles

  • Bring a pot of water to a boil and cook the udon noodles according to package instructions until tender. Drain and set aside.

Preparing Vegetables

  • While the noodles are cooking, julienne the carrot, slice the bell pepper, and cut the zucchini into rounds. Prepare the broccoli florets into bite-sized pieces.

Sautéing Vegetables

  • In a large skillet or wok, heat the vegetable oil over medium-high heat.
  • Add the julienned carrot, sliced bell pepper, broccoli florets, and zucchini rounds. Sauté for about 5-7 minutes until tender yet crisp.

Combining Ingredients

  • Gently introduce the cooked udon noodles into the skillet with the sautéed vegetables, tossing to coat.
  • Pour in the soy sauce, mirin, and sesame oil. Toss again for 2-3 minutes to meld flavors.

Serving

  • Dish out the Grilled Udon onto plates or bowls and garnish with chopped green onions.

Notes

Don't overcrowd the skillet; cook in batches if necessary. Optional to add protein for a heartier meal. Spice it up with chili oil or sriracha for serving.
