Preparation

  • Start by seasoning the beef cubes generously with salt and black pepper, letting them absorb the seasoning.
  • Heat olive oil in a skillet over medium-high heat. Carefully add the beef cubes, browning them on all sides until they develop a rich, golden crust. Once browned, transfer the beef to your slow cooker.
  • In the same skillet, toss in the diced onion, minced garlic, and sliced mushrooms. Sauté these ingredients until they soften and become fragrant, then add them to the slow cooker with the beef.
  • Pour the beef broth into the slow cooker, followed by the Worcestershire sauce and Dijon mustard, if using. Stir well.
  • Cover the slow cooker and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
  • About 30 minutes before serving, mix the flour or cornstarch with cold water to create a slurry. Stir this mixture into the slow cooker to thicken the sauce.
  • Gently fold in the sour cream, stirring until creamy. Taste and adjust the seasoning if necessary.
  • While the sauce is finishing, cook the egg noodles according to package directions, then drain.
  • To serve, pile the beef stroganoff over the egg noodles and garnish with fresh parsley.

Notes

For the best results, season the beef ahead of time and sear it for more flavor. Fresh ingredients make a difference.
