Instructions
 

Preparation

  • Slice the onion into thick rings, about 1/4 inch thick, and separate the rings.
  • In a mixing bowl, whisk together the buttermilk and eggs. Add the onion rings and soak for 10-15 minutes.
  • Prepare three bowls: one with the dry coating (flour, cornstarch, baking powder, paprika, salt, pepper, garlic powder), one with the buttermilk mixture, and one with the panko breadcrumbs.

Coating

  • Dredge each soaked onion ring in the flour mixture, then dip in the buttermilk-egg mixture, and finally roll in the panko breadcrumbs.
  • Place the coated rings on a plate for frying.

Frying

  • Heat oil in a deep pot to 350°F (175°C).
  • Fry onion rings in batches for about 2-3 minutes until golden brown and crispy.
  • Remove with a slotted spoon and drain on a wire rack or paper towels. Season lightly with salt while warm.

Notes

For perfect onion rings, use yellow onions for sweetness. Ensure the oil temperature is consistent to avoid greasy rings. For a gluten-free version, use gluten-free flour. Adding hot sauce to the buttermilk mix can spice things up.
