For the Cake

  • 12 large large egg whites The star of our angel food cake.
  • 1.5 cups granulated sugar For the perfect balance of sweetness.
  • 1 cup cake flour Ensures a light crumb.
  • 1.5 teaspoons cream of tartar Stabilizes the egg whites.
  • 0.25 teaspoon salt Enhances the flavors.
  • 2 teaspoons vanilla extract Adds aromatic flavor.

For the Cream Filling

  • 1.5 cups heavy whipping cream Essential for the luscious layers.
  • 0.25 cup powdered sugar Sweetens the whipped cream.
  • 2 cups fresh raspberries Vibrant and juicy for color and zest.
  • 0.5 cup raspberry jam or compote For added fruity depth.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Separate the egg whites from the yolks, ensuring no yolk gets into the whites.
  • In a clean bowl, beat the egg whites with cream of tartar and a pinch of salt until soft peaks form.
  • Gradually add 3/4 cup of granulated sugar, continuing to beat until stiff peaks form.
  • In another bowl, sift together the cake flour and the remaining 3/4 cup sugar.
  • Gently fold the flour mixture and vanilla extract into the whipped egg whites.
  • Pour the batter into an ungreased 10-inch tube pan and smooth the top.

Baking

  • Bake in the preheated oven for 35 to 40 minutes, until golden and springs back when touched.
  • Invert the pan to cool completely upside down.

Layering

  • Once cooled, remove the cake from the pan and slice it into 2 to 3 layers.
  • Whip heavy cream with powdered sugar until soft peaks form.
  • Fold the fresh raspberries and half of the raspberry jam into the whipped cream.
  • Spread the raspberry cream between cake layers generously.
  • Spread remaining raspberry cream on top and sides of the cake.
  • Garnish with reserved raspberries and drizzle remaining raspberry jam on top.

Chilling

  • Chill the finished cake for at least an hour before slicing and serving.

Ensure your mixing bowl is clean and grease-free for the best results. Avoid overmixing when folding in flour to maintain fluffiness.
