  • 2 cups Celery, chopped Crisp and aromatic.
  • 1 large Onion, diced Fragrant and golden.
  • 1 cup Heavy Cream Rich and silky texture.
  • 1/2 cup Parmesan Cheese, grated For garnishing.
  • 2 cups Baby Spinach Tender and nutritious.
  • 3 cloves Garlic, minced For the aromatic base.
  • 1 tbsp Italian Herbs A blend of oregano, basil, and thyme.

Preparation

  • Heat a large pot over medium heat. Add the Italian sausage and diced onions, sautéing until the sausage is browned and cooked through, and the onions are golden and fragrant.
  • Add the chopped carrots and celery, stirring them with the sausage and onions to build depth in flavor and texture.
  • Transfer the sausage mixture to a slow cooker. Add garlic and Italian herbs, then pour in the broth. Simmer on low heat for several hours.
  • Stir in the fresh tortellini and baby spinach towards the end of cooking. Pour in the heavy cream and ensure the tortellini cooks until tender.
  • Serve the soup in bowls, garnished with freshly grated Parmesan cheese.

Notes

For extra flavor, deglaze the pot with broth after browning the sausage. Feel free to add extra vegetables. To save time, prepare everything on the stovetop instead of using a slow cooker.
