  • 2 cups all-purpose flour Forms the base of the cookies.
  • 1/4 cup cornstarch Keeps the cookies tender.
  • 1 teaspoon vanilla extract For flavor enhancement.
  • 1/4 teaspoon salt Enhances overall flavor.
  • 1 cup fruit jam (raspberry, strawberry, etc.) Filling for the cookies.
  • optional powdered sugar For dusting before serving.

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until fluffy, about 3-5 minutes.
  • Add the vanilla extract and mix until incorporated.
  • In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt.
  • Gradually mix the dry ingredients into the butter-sugar mixture until just combined.
  • Roll the dough into 1-inch balls and place them on the prepared baking sheet, leaving space between each.
  • Make an indentation in the center of each ball and fill with about 1 teaspoon of fruit jam.

Baking

  • Bake for 10-12 minutes or until edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
  • Dust with powdered sugar before serving, if desired.

Notes

Experiment with different jam flavors for variation. For sticky dough, chill in the fridge for about 30 minutes.
